return of the risotto and garden update!

it has been raining heaps here since last week, and more rain to come. this is great because i love the sound of rain on the roof tops and it give you a good excuse to get back to inside activities like sewing, baking, cooking, and reading in bed.



this is how my garden is looking at easter time. all my seeds that i kind of threw around in the garden are starting to come up and things are looking very promising. it is so satisfying to watch it all grow, and do some weeding and eat the things you grow.



unfortunately earlier this year i planted out about 10 beetroot seedlings. from that batch only 2 survived. now i was thinking what can a girl do with just 2 beetroot? usually i would make borscht or beetroot and chickpea and feta salad but with only 2 i was unsure of what to do.



but then since it was a bit chilly out due to the rain i was inspired to go back to one of my favorite dishes ever, risotto. i love making and eating risotto, and i decided to use my beetroot in this. so i chopped it up then roast it in the oven with some garlic and olive oil until it was tender. then i made the risotto as normal and half way added the beetroot and spinach and snow peas. then right at the end some roasted pine nuts too.



voila the result was a yummy meal, that was a nice pink colour and so satisfying to eat. i will definitely do this again, especially seeing as i have planted some beetroot from seed and they all seem to be sprouting up really well.
