continuing with my winter soup making spree - here is my first attempt at making vegetarian borscht. i have never made it before because it seemed so daunting. i thought it was hard. i was worried it wouldn't taste as good as when my baba (grandma) or mom made it. but it was really good!
so either it's not that hard to make or i am a really good cook. for lunch yesterday i even went to the local pierogi shop and got some pierogi to eat with the soup and rye bread. back to my Ukrainian roots.

viva la borscht!! i love beets. LOVE. serious beet lover. my borscht sucks though.

I've made it before, too, with surprisingly good results. It's in our genes! That's got to be it!!
